Dish du Jour: Vietnamese Lemongrass Chicken

Awwwwwww J’YEAH! It’s on like donkey kong ya’ll. For those of us that are night owls, early birds (i.e. waking up before 12noon on a Sunday) or complete insomniacs… you now know what it is that we’re serving. Good on you!

We tried almost 10 different chicken dishes this week (read a previous post about CHICKEN EXPLORATION WEEK), and it held it’s own and we’ve found some future chicken dishes in the process!

Lemongrass, as an ingredient, is one that’s very popular and has a special almost marriage-like relationship with Vietnamese food. I KNOW because my mom SMS texted me confirming I’m Vietnamese! That’s how cool my mom is: SMS texts, IM chats AND she knows all the lyrics to R. Kelly’s “rap opera” Magnum Opus, TRAPPED IN THE CLOSET (I DARE you to click the link for maximum hilarity). Oh yeah, she MIGHT have told me Snake Eyes from G.I.Joe is a real person and COULD be my father… REALLY! (well, at least some of this stuff about my Mom is real ^_^)

Back to the main topic: LEMONGRASS. Well, this grass don’t taste like crap combined with lemon either. Once you taste this “grass” sent from the gods themselves in our chicken recipe… if you’re an Irish Catholic from Boston (or Ireland) you’re going to say to yourself “Jesus, Mother, Mary and Joseph”, because it’s THAT over. Flavor enlightenment my friends. FLAVOR ENLIGHTENMENT

Alright, alright. You might be saying to yourself, “Team Starry Kitchen, are you smoking crack,” and I would reply, “Naw, but lemon grass is kinda like that once you have it. Hell, everything Starry Kitchen serves has addictive flavor properties that church goers, talent agents, pharmacists and drug lords (one in the same if you ask me LOL) alike can put aside their differences (and uzis) aside to share the common bond of… you guessed it, flavor enlightenment.” ^^

Seriously though (only serious paragraph of this post), it’s good stuff. We definitely don’t want to blow it out of proportion, but it is quite tasty and we invite you and your friends to come and at least try a sample.

We’re going to have at LEAST two different sauces we’ll be serving too. First is the mango+avocado salsa, and secondly there’s what I like to call the GS3 (Ginger Sesame Sake Sauce). We had the same sauces when we had our version of the kalbi tacos two weeks ago, and that was…B-O-M-B (that’s vernacular for “Cool” Mom)!

Before I forget, here are a couple of quick pics from Pure Luck, and one of my old favorites - Scoops (I was there for the first/last kimchi flavored ice cream… I would concur with that choice not to revisit that idea ^_^). Since it’s getting late, quick summary: food is good and these jack fruit meat substitutions are very good in texture and flavor. Who would have thunk it?!?!

Brotherly Bonding Over “Bo Kho” and Pan Asian Delicacies

That says it all, right??? Well, that ain’t enough to meet the high (or low depending on your perspective) quality of posts set by Team Starry Kitchen and our “R&D” department. So I’m going to keep on typing some more interesting and useful fluff for you, our reader(s), to consume, digest and dispense in coversation next to the watercooler (or Xerox machine) tomorrow while discussing what you are going to do this weekend. I’m personally going re-enact the Civil War in the AM (“How To” HERE), traveling back in time to retrieve that $5 my friend “Pudge” owed me back in Jr. High and then come back to the present to buy some “yum yum stick it in my VEINSAuntie Ems red velvet cupcakes with that $5. “All in a days work ma’am.” How about you?

FRIENDLY DIN-DIN TIME!

SO, above is a classic Vietnamese comfort food dish “bo kho” (Vietnamese beef stew), jap chae (Korean glass noodles) and some yummy lemon grass pork. That pork combined with rice, could POSSIBLY catalyze world peace or inspire large Bollywood-riffic dance routines with people… it’s pretty taste-tacular.

We (meaning Thi) can take credit for the bo kho and jap chae, but our friend, countryman and virgin Tweeter (he’s about to pop his Twitter cherry soon, I’m SO EXCITED)- Quan Phung, can take all the credit he wants for the ribs. “He puts the ‘Phung’ in Funny!” Not my quote, someone elses, but I do like how that looks in print. Simply SASSY! ^^ “Did somebody say… SASSY?

Here are our fabulous hosts, Quan and his lovely wife, Michelle Ko posing with Chef Thi Tran. I can tell you this- when foodies combine forces…. it’s a beautiful thing. Stories, cuisine, recipes, restaurants and food blogs. Oh man, it’s sensational sensory OVERLOAD!!! Give me a moment, this beautiful union is almost too much that I’m getting all verklempt just thinking about it. (sniff sniff)

Will this madness end? Prolly not. Do I want it to? HELL NAW - this sh-t is GOOOOOOOOOD! I likes it a WHOLE LOT. Hot diggity DAMN!  These last couple of days have been BUSY!!  So if you barely know me or are coming to us from an igloo in Alaska (WELCOME AlaskaSIA!), I, the mysteriously handsome and charming STARRY KITCHEN blogger extraordinaire (or quite the contrary), actually work in the film biz (someone’s gotta sweep the floors on the lot).  What does that have to do with the four tasty sauces above?  Again, ABSOLUTELY NOTHING!  Btw, ALL the meetings & pitches I’ve taken recently, the MINUTE I mention STARRY KITCHEN and our concept, ALL conversation gets derailed completely.  Not sure if my other colleagues are appreciating it, but sure beats all the normal gossip we in the film industry dole out (IMHO - film biz = glorified high school ^^).

But anyway, more about ME… or actually US!  We’ve been at the Los Angeles Film Festival all weekend, catching up with old friends, making new ones (like our new friend Chris Pine aka New Capt. Kirk… okay, we just ran into him at a bar through a friend of a friend of a… well, that’s Hollywood!) drinking free booze and watching films.  So that would explain the lack of content the last couple of days.  So sorry!

Just to break this shit up, here’s a picture of my favorite imaginary past time (squirrel fishing) that my alter-ego, CRAFTY BARNARDO (that’s my wu-tang name foo’, find what “wu are you” click HERE dawg):

These include the GS3 (Ginger Sake Sesame Sauce), the mango avocado salsa, a sweet-sour Thai peanut sauce, and some olive oil concoction that has since disappeared into oblivious (KA BLOOMIE!!!!).  You might ask again, why the sauces?  Well, alcohol MIGHT have something to do with it… or just the fact that we didn’t take any pics tonight and thought that might be a good cheapie hold over.  Not good enough for you CHUCK NORRIS!?  Well you can go ahead and suck it!  And of course, by “it” I mean you should SUCK a tasty Blow Pop w/ a sugary gummy center… I didn’t REALLY mean to make any lude references to any genitalia… well, at least not MY genitalia.  So get your head out of the gutter and pay attention, there’s a brain washing instructional video below.  Which is a HINT for this Sunday’s service:



Last reminders: #1 - service is ON for Tuesday (June 23rd) nite from 6-9p, and we’re serving Korean Kalbi/beef short-ribs. #2 - Sunday service is still on from 12-3p.  Do you need a secret, then read the paragraph above dummy!

“HOLY DRUMSTICKS BATMAN IT’S” M…M…M….MOOOOOOORE CHICKEN!!!

The honest to (insert your deity of choice here) truth, “scouts honor” (but only Cub Scouts, not Boy Scouts because I didn’t make it that far LOL): all this chicken was completely unplanned, unexpected, unintended, but DAMNIT if this food blogger (I’m just going to assume I’m in that genre now) didn’t welcome every morsel and every version of chicken with open arms… or an open mouth, whatever mental image you prefer.  Either way, I did drool a little bit with every nibble. (uh huh huh huh….CHICK…EN)  

From this day forth (…forth…forth) I will now declare this week CHICKEN EXPLORATION WEEK!  I kind of feel like it’s one of those Discovery Channel themes.  I can’t wait until they do have that theme ‘cuz that would be SUPA DUPA (or “HELLA” if you’re from NorCal) SCH-WEET.

As far as the chicken pictured above, I don’t even know where to begin.  There’s the:
char siu chicken-“who would have thunk it that it works with anything other than pork???  Who knew!??!?!”
Taiwanese popcorn chicken-“EXACTLY like the ones you get at the boba shops- so cute and tasty”
the noodles weren’t chicken at all, but were yummy peanut butter noodles
And my favorite - the Malaysian chicken wings-“so MUTHA F’ING heavenly”
Well, I’ll keep this one short(er) because it’s the weekend, and I’m sure most of you (“you” implies someone’s reading this… anyone? anyone???) get bored of reading my Banal Blabbering Banter (alliteration fun for everyone!) anyway.  Don’t forget to come this Sunday (read “old” post w/ info HERE).  This weekend’s dish is so good we tried it TWICE already.  Can’t wait!  Until then, I’ll leave all of you with this note:

We’re going to have at LEAST two different sauces we’ll be serving too. First is the mango+avocado salsa, and secondly there’s what I like to call the GS3 (Ginger Sesame Sake Sauce). We had the same sauces when we had our version of the kalbi tacos two weeks ago, and that was…B-O-M-B (that’s vernacular for “Cool” Mom)!

Before I forget, here are a couple of quick pics from Pure Luck, and one of my old favorites - Scoops (I was there for the first/last kimchi flavored ice cream… I would concur with that choice not to revisit that idea ^_^). Since it’s getting late, quick summary: food is good and these jack fruit meat substitutions are very good in texture and flavor. Who would have thunk it?!?!

“HOLY DRUMSTICKS BATMAN IT’S” M…M…M….MOOOOOOORE CHICKEN!!!

The honest to (insert your deity of choice here) truth, “scouts honor” (but only Cub Scouts, not Boy Scouts because I didn’t make it that far LOL): all this chicken was completely unplanned, unexpected, unintended, but DAMNIT if this food blogger (I’m just going to assume I’m in that genre now) didn’t welcome every morsel and every version of chicken with open arms… or an open mouth, whatever mental image you prefer.  Either way, I did drool a little bit with every nibble. (uh huh huh huh….CHICK…EN)  

From this day forth (…forth…forth) I will now declare this week CHICKEN EXPLORATION WEEK!  I kind of feel like it’s one of those Discovery Channel themes.  I can’t wait until they do have that theme ‘cuz that would be SUPA DUPA (or “HELLA” if you’re from NorCal) SCH-WEET.

As far as the chicken pictured above, I don’t even know where to begin.  There’s the:
char siu chicken-“who would have thunk it that it works with anything other than pork???  Who knew!??!?!”
Taiwanese popcorn chicken-“EXACTLY like the ones you get at the boba shops- so cute and tasty”
the noodles weren’t chicken at all, but were yummy peanut butter noodles
And my favorite - the Malaysian chicken wings-“so MUTHA F’ING heavenly”
Well, I’ll keep this one short(er) because it’s the weekend, and I’m sure most of you (“you” implies someone’s reading this… anyone? anyone???) get bored of reading my Banal Blabbering Banter (alliteration fun for everyone!) anyway.  Don’t forget to come this Sunday (read “old” post w/ info HERE).  This weekend’s dish is so good we tried it TWICE already.  Can’t wait!  Until then, I’ll leave all of you with this note:

Brotherly Bonding Over “Bo Kho” and Pan Asian Delicacies

That says it all, right??? Well, that ain’t enough to meet the high (or low depending on your perspective) quality of posts set by Team Starry Kitchen and our “R&D” department. So I’m going to keep on typing some more interesting and useful fluff for you, our reader(s), to consume, digest and dispense in coversation next to the watercooler (or Xerox machine) tomorrow while discussing what you are going to do this weekend. I’m personally going re-enact the Civil War in the AM (“How To” HERE), traveling back in time to retrieve that $5 my friend “Pudge” owed me back in Jr. High and then come back to the present to buy some “yum yum stick it in my VEINSAuntie Ems red velvet cupcakes with that $5. “All in a days work ma’am.” How about you?

FRIENDLY DIN-DIN TIME!

SO, above is a classic Vietnamese comfort food dish “bo kho” (Vietnamese beef stew), jap chae (Korean glass noodles) and some yummy lemon grass pork. That pork combined with rice, could POSSIBLY catalyze world peace or inspire large Bollywood-riffic dance routines with people… it’s pretty taste-tacular.

We (meaning Thi) can take credit for the bo kho and jap chae, but our friend, countryman and virgin Tweeter (he’s about to pop his Twitter cherry soon, I’m SO EXCITED)- Quan Phung, can take all the credit he wants for the ribs. “He puts the ‘Phung’ in Funny!” Not my quote, someone elses, but I do like how that looks in print. Simply SASSY! ^^ “Did somebody say… SASSY?

Here are our fabulous hosts, Quan and his lovely wife, Michelle Ko posing with Chef Thi Tran. I can tell you this- when foodies combine forces…. it’s a beautiful thing. Stories, cuisine, recipes, restaurants and food blogs. Oh man, it’s sensational sensory OVERLOAD!!! Will this madness end? Prolly not. Do I want it to? HELL NAW - this sh-t is GOOOOOOOOOD! I likes it a WHOLE LOT. You know what Ol’ Captain Jack Sparrow would say, “YOU CAN DO IT!” (he’s a big Rob Schneider fan… I SWEAR!)

I can tell you that we’re going to use two - three of the sauces displayed here.  Those make the flavors really pop.  So much it makes me want to learn how to do that Souljaboy dance so I can do it in the kitchen.  I of course didn’t know the existence of this dance until I saw this little kindegartner (and an old friend who’s a grown man) at my Indian friend’s wedding doing this while I was trying to catch up with the latest dance crazes learning the bhangra (which is quite fun, and I’m sure quite hilarious to see a Vietnamese-Texan doing this at a predominantly Indian wedding ^_^).

but again I digress.  Enjoy this little tidbit of a hint, and please spread the word.  We’re goin’ to bust this mutha out of strictly Sundays and prolly (yes, “prolly”) hittin’ up a weekday this upcoming week. Prolly Wednesday!
